DMV #18
This recipe uses a local flour grown in the DMV area. I've been refining the recipe over many iterations, but the addition of the 00 flour provides a softer chew.

- 40g Red Fife No.6013-14% protein
- 5g Tapioca starch
- 1g Egg White Powder
- 1.5g Salt
- 1.5g Kansui Powder Type 2
- 38ml Water
- Pinch Riboflavin
