    32 g makes this recipe 32% hydration. You can increase this up to 35 to make things easier or even go down if you want a challenge. I think 32 is challenging enough on home equipment!
  • 100 g Hi-Gluten Flour
    I use King Arthur's Sir Lancelot which is 14.2% protein
  • 1 g Salt
  • 1 g Kansui Powder Type 3
